Over the last seven years, every time you’ve stopped in for fresh treats you’ve been welcomed with a familiar view. A cold case full of cakes, cupcakes, and mini desserts and a dry case stocked with scones, rolls and cookies. Over the past few months we’ve been busy working on a HUGE project behind the scenes that we are SO EXCITED to finally share with you! Next time you stop in for that sweet birthday cake or after school treat, you’ll be welcomed with a beautiful  new pastry case, layout, countertop, and retail display!

Without a doubt, December is our busiest month of the year. We were cleaning and closing up shop one cold December evening and one of the pastry case doors FELL OFF. Why don’t things ever break during business hours?! Our repairman came to save us, of course, so we could open up the next day. But Erin decided that this incident would signal the launch of a much needed cafe expansion! As our team and business have grown over the past few years, we’ve been dreaming of how we could expand our display and work space to support! One of our core beliefs at Dolce is that we can find good or bring the good to any situation. This was no different! Why waste a crisis?

Kathleen (Director of Sales and Operations) and Erin dreamed up this incredible remodel with the help of some of our local friends! First, thanks to Robin Krause at Billie’s Grocery for buying the pastry case of our dreams - and sharing all of the details with us! 

Then, we met with Joel Perry at Indwell Architecture & Design to get our vision outside of our heads and into sketches. Joel is prompt, patient (in answering our million questions!), and nailed our vision on the first pass. 

Let’s talk about these stunning countertops! AJ Burke at A & A Granite Fabrication showed us countless beautiful slabs on the way to finding our perfect match. He and his team were professional, prompt, and executed our countertops perfectly.

Randy Taylor at RWT Projects brought the function and the beauty to our new custom cabinets! His build accommodated our requests for under counter speed racks, pull out trash cans, and pull out surfaces (instead of typical shelves) so we can store and easily access custom orders. Randy and his installation team were prompt, hard working, and handled every single little detail on our list.

Carl at Index Restaurant Supply helped us to get just the right specs ordered on our beautiful refrigerated display case.

Larry Farr and team at the Farr Company helped us with all the heavy and mechanical parts of this project!

Our new bakery counter and pastry case will allow for more space to serve you, both in terms of what we offer and the ability for you to see it all! We have also built in the space to offer more grab-and-go, pre-packaged sweets. Here are some behind the scenes looks at the new space:
